The sweet-scented steam and gentle whistle of the ceramic pot are ever-present in this Michelin-starred venue, as is the soft crackling sound of flame-licked charcoal from the kitchen. Pitted in inner-city Nara, Gokan Uogin lives up to its name — “gokan” means “five senses” — with a menu that stimulates all of them.


The emphasis on multisensory is clear across the board, and when writing the menus, the chef bases their decisions on whatever is in season. Fresh fish is sourced daily from the market, and regional catches are delivered from fishermen across Japan. A deep respect for Nara foodstuffs is wrapped in small, artfully composed dishes featuring Yamato beef and vegetables grilled over charcoal. It all comes down to a sensible traditional Japanese multicourse that climaxes in Hinohikari rice. Glossy, plump and mildly sweet, the grains are cooked under high pressure in custom-made heavy-lidded pots cooked on a wooden stove. Dishes are served on crockery chosen from renowned potters, with creativity subtly woven into the cuisine.


Diners can pair their meal with chef-recommended sake on the counter, outfitted from a block of solid, single-plate wood. The atmosphere is hushed and reverent, the service warm and discreet.
