The tea ceremony, one of the most deeply-rooted Japanese traditions, in which every gesture is measured with grace and formality, ensures that the presentation is attended to with perfection. Gion Matayoshi, a traditional kaiseki restaurant in Kyoto’s most historical district, takes its cues from tea ceremony in its style of service. However, the chef also has the plating and presentation sensibilities of a modernist, creating a unique combination of old and new in the dishes served here.
Over the course of around three hours, guests are served a delectable series of dishes including ginkgo nut cream, sea urchin with miso, sashimi, sushi, and a hassun seasonal showcase — each of which justifies the two Michelin stars the restaurant holds.
