Lovers of Tokyo’s Edomae sushi will be thrilled to find such an authentic flag bearer for the style all the way south in Fukuoka. Here, the chef prepares an extensive omakase meal of 12 pieces of nigiri, preceded by some seafood appetizers.


The rice is prepared with care, making sure to achieve the correct firmness and texture to match each dish. Red vinegar seasoning matches beautifully with the sushi toppings, with just enough acidity to break down the flesh and unlock the umami flavors.


In the very Japanese spirit of restraint and simplicity, only a single type of sake and a single beer are on offer. The main focus is the incredible fish, with the drinks selected so as to not interfere with nor detract from the flavors.
