Akasaka residents have every reason to celebrate the arrival of amorphous Akasaka, a dynamic new venue that's making waves in 2024. Backed by visionary trio and entrepreneurial dream team of Horie Takafumi, Shinagawa Ikko, and Hamasaki Ryu, the venue lives up to its moniker. “Amorphous” describes a state where atoms and molecules lack structure — a fitting metaphor for the restaurant that eschewing predictable rhythms or formulas of dining standards.
At the forefront is the star recruit, Chef Lee Junfang, a fourth-generation Korean-Japanese chef with expertise in French cuisine from his time at the eponymous Lee in Osaka. Under his leadership, amorphous Akasaka’s menu fluidly hops between Japanese, Western and Chinese influences, transcending the conventions of each culinary archetype to deliver a genre-defying dining experience.
The food goes wherever it wants. Diners embarking on the omakase journey may experience a sense of deja vu, encountering unexpected yet familiar combinations like chilled green pepper with pork, Taiwanese ramen-inspired pasta and mapo tofu with truffles. The Unzen ham cutlet, thick and tender, is brushed with Lee’s special sauce and sandwiched between two milk breads. The delicious inventions are all born from Lee’s wonderfully busy imagination.
The restaurant, with its clean, sharp silhouettes, is a direct juxtaposition to Lee’s boundless creativity. Though the overall palette is black, textured finishes like concrete, plaster, paper, wood and fabric adds dimension to the space. Thoughtful details, like the entrance door handle crafted from Ezo deer horn and a silver seal with blue wave patterns in the hallway, pay homage to the rugged beauty of Wakkanai, the chef’s hometown.
From 5 pm to 10 pm, amorphous Akasaka operates as a "delicious food store," and from 10pm onwards, it transforms into a members-only wine salon.
