The Seto Inland Sea has some of the richest waters in Japan, and Ajiyoshi — a seafood restaurant in Fukuyama, just up the coast from Hiroshima — has been taking advantage of this fact since 1976. The bamboo fence outside conceals a charming old townhouse behind, where you’ll enjoy one of the best Michelin-starred seafood meals in the region.


Their seasonal menu of this Michelin-starred restaurant features the best catches from throughout the year. This means crab and fugu blowfish in winter, parrot fish and tuna in summer, and sea bream in spring. Each is prepared in a variety of ways, including as sushi, sashimi, donburi rice bowls, soups, and shabu-shabu hotpot.
