The head chef, Tsuji Yoshikatsu, has lived and breathed great cooking since his childhood days. He pays an extreme amount of attention to matching the seasonal ingredients he uses with the techniques applied to the dish. With an ever-changing nine-course omakase menu to suit the season, the chef executes each procedure perfectly to bring forth the delicate, natural taste of the ingredients.
Being both an ochaya (restaurant where guests can enjoy meals while being entertained by maiko and geisha) and okiya (a lodging establishment for maiko and geisha), Aji Fukushima is the ultimate place for a genuine, once-in-a-lifetime cultural dining experience.
