Fukukomachi Daiginjo (Kimura Shuzo)
This daiginjo sake is a representative "work of art" of Kimura Shuzo, which has won numerous awards for its gorgeous ginjo aroma. It has a strong impact on the palate and a luxurious yet sharp, crisp taste—the clarity that only polished sake can have.
Recommended drinking temperatures are “hanabie” (about 10℃) and “suzubie” (about 15℃), but it can also be served as “hinatakan” (about 30℃).

"Founded in 1615, at the time Kimura Sake Brewery was one of the few sake breweries in Akita, the prefecture that today is known for numerous highly-regarded sake brewing establishments. Kimura was founded by the family of Shigenari Kimura, a shogunate vassal of the Toyotomi family, taking advantage of the bountiful rice-growing climate. Since then, the sake brewing industry has flourished alongside the stable rice cultivating traditions.
During the Edo period (1603-1867), thanks to the prosperity brought by the local Innai Ginzan Silver Mine, Kimura Brewery’s business prospered. The establishment of the Ou Line by the East Japan Railway in 1905 allowed the company to begin shipping their nihonshu beyond the borders of Akita prefecture. It has been 400 years since the company was founded, yet they maintain their commitment to brewing sake, while remaining attentive to the local community and society."
