Experience Details
Udon, one of Japan's essential noodle dishes, are thick, slurp-worthy noodles that can be enjoyed either hot or cold, served with various sauces. Udon noodles typically contain wheat flour, but in this hands-on cooking class, you'll make gluten-free and vegan noodles from scratch, reflecting your host Chef Chiaki's passion for accommodating different dietary preferences. Rest assured: while the recipe may be a little different, these delicious noodles are as good as the real thing!
After meeting your host near Nippori Station, you'll walk together to her kitchen, where you'll get to work after a brief introduction and overview of the recipe. Making noodles from scratch may seem daunting, but it's quite simple and fun! Even if you're a beginner, Chiaki will ensure everyone enjoys the class regardless of skill level.
Having studied cooking at Osaka's Tsuji Culinary Institute, Chef Chiaki worked abroad as a cooking instructor in Canada and China, where she developed a keen interest in learning about different cultures. As the owner of an organic products store and restaurant, Chiaki focuses on healthy Japanese seasonal and traditionally inspired dishes that suit various allergies and dietary restrictions, with an emphasis on organic, gluten-free, and plant-based foods.
Once you've made your noodles, Chef Chiaki will also take you through a cooking demonstration of vegetable tempura, a crispy, deep-fried food that goes perfectly well with a bowl of udon. Enjoy your comfort meal with your classmates while sipping fresh Japanese tea, and leave with a take-home recipe booklet to recreate this quintessential Japanese dish back home.
