Your host, Aoki-san, extends a cheerful invitation to people from all walks of life to her cooking salon. Whether you’re a newcomer looking to refine skills or a seasoned expert in search of new horizons, a warm welcome awaits. In February 2022, Aoki-san inaugurated her culinary school, and since then, she has broadened her offerings to include captivating online cooking lessons. Her mission goes beyond conventional cooking; it revolves around enhancing the dining experience, creating an uncomplicated and thrilling table for everyone who partakes.
In this hands-on experience, you'll dive into the art of chirashi sushi. Learn the secrets of crafting perfect sushi rice, bonito (fish) and kelp dashi (broth), master the delicate art of handling sushi vegetables and unlock the mystery behind creating kinshi tamago (shredded egg crepe). You’ll also make various side dishes, including miso soup and kakiage (crispy vegetable and seafood tempura).
Chirashi sushi is a traditional Japanese dish that consists of a bed of seasoned sushi rice topped with a colorful array of fresh ingredients. The name "chirashi" means "scattered" in Japanese, which reflects the presentation of the dish. Typically, chirashi sushi includes a variety of ingredients such as thinly sliced sashimi (raw fish), cooked seafood like shrimp or crab, omelet strips, pickled vegetables, and sometimes garnishes like sesame seeds, nori (seaweed), or shiso leaves. The selection of ingredients can vary, often depending on personal preferences and the chef's creativity.
