In almost every kitchen in Japan you’ll find a block of tofu, and for good reason. Sought after for its health benefits and extensively used in Japanese cuisine for its versatility, tofu is something of a star ingredient — but do you know how to use it, and can you tell the difference between its many different kinds? During this tofu-centered cooking class in Setagaya, you’ll learn all about tofu from a seasoned cooking instructor who will show you how to make three different tofu dishes following traditional Japanese recipes.
This tofu cooking class is led by Morimi, a professional chef from Tokyo who has been hosting home cooking classes for 15 years. She is not only a qualified food education advisor but also a master in the art of Japanese flower arrangement (ikebana), and using her honed attention to detail and eye for design, she will share how to make tofu dishes that are a treat for the mouth and a feast for the eyes.
To start your cooking experience, Chef Morimi will share the details of the day’s menu and demonstrate how to prepare each dish. Along with the three tofu dishes, you will learn how to prepare two fundamental elements of Japanese cuisine: rice and dashi. First, Chef Morimi will teach you the best way to cook rice the Japanese way using a regular pot. Then, you will combine kelp, mushrooms and fish flakes to make dashi, a soup stock that adds umami to many Japanese dishes.
This tofu cooking class is designed to be hands-on and interactive! After watching Chef Morimi’s demonstrations, you’ll recreate the techniques and recipes yourself. By the end of the class, you will have made three tofu dishes, two onigiri (rice balls) and a clear soup known as suimono. Don’t forget to take photos of your creations before eating. You’ll enjoy a cup of green tea alongside your meal and receive copies of the recipes to make these delicious dishes again.
