Let a pro chef teach you all you need to know about sushi making in this private class in Ikebukuro. Chef Odaira has spent over a decade working in a Kappo restaurant and later decided to share his knowledge through cooking classes, teaching children with special needs and their families and working to support their independence. In this class, friendly chef Odaira — with the help of an equally friendly English-speaking interpreter — opens the treasure trove of his impressive sushi knowledge to share some of his best insights with enthusiast sushi makers.
The class will start with an introduction to the history of sushi, and an overview of the ingredients before Chef Odaira demonstrates how to cut the toppings with expert precision, shape the rice to make sushi, and assemble a nigiri for you to try.
You will then learn to make three types of sushi: nigiri (rice and toppings), gunkan maki (rice and toppings wrapped in seaweed), and maki rolls with fillings wrapped in seaweed. Only fresh fish is used, so ingredients vary depending on the season, but nigiri toppings typically include medium fatty tuna, tuna, yellowtail, salmon, squid, shrimp, scallop, whelk and salmon roe. You will enjoy sushi with a delicious miso soup.
Chef Odaira will explain a few basics of sushi etiquette, like how to put soy sauce and eat sushi with chopsticks, so you become a true connoisseur. After eating, you will end the class on a sweet note by making matcha green tea and enjoying it with traditional Japanese confectioneries (wagashi.)
