Japanese sake is versatile, ranging from sweet to dry, cloudy to clear, and aged to fresh. Each kind pairs well with specific foods and enhances flavors. This dining experience invites you to enjoy four dishes expertly paired with sake by a sake sommelier who will teach you fascinating insights about the history and customs of Japanese cuisine and sake pairings.


While some kinds of sake are best enjoyed cold, others release most of their umami at around 55 degrees Celsius. Serveware can also impact flavors and aromas, and the chef and sommelier leading this experience take care of all these details to show you just how flexible sake can be by serving a variety of dishes with diverse aromas and flavor notes.


While the exact offerings will vary depending on the season, two vegetable dishes and two meat or fish dishes paired with four different types of sake, including honjozo, tokubetsu junmai, kimoto, and aged sake, are typically on the menu. Each dish and sake pairing promises a unique feast for all senses.


This dining experience takes place at Mai Shin, an izakaya restaurant near Shibuya Station that specializes in sake pairings.
