Vegetarians and vegans are welcome to join! The decorative sushi uses rice vinegar, sugar, sesame, vegetable, and nori (seaweed). To color the rice, all-natural plant pigments are used. The red pigment is made from fermented red rice, blue is extracted from algae, orange is extracted from Japanese mustard, and green/yellow comes from the gardenia fruit.
