In this Japanese Miso Making Experience in Kagoshima, you will visit a miso factory run by Sakura Kaneyo, a soy sauce and miso maker established in 1927. At the factory, they still make Japanese miso using traditional methods and will teach you how to make your own miso from scratch! You’ll soon find out that miso is an essential Japanese ingredient, which is used in much more than just soup.

There are so many types of miso in Japan, and different regions have their own varieties of miso. The miso made in Kagoshima has a slightly sweeter flavor and a powerful aroma. You will learn how to make a special variety of Japanese miso (specifically, Kagoshima miso) called mugi-miso, which is made from barley and soybeans. With over 90 years of experience making soy sauce and Japanese miso, Sakura Kaneyo is the perfect place to learn about Kagoshima miso and make it for yourself!
Since miso is a fermented product, you won’t be able to enjoy it right away. Like a good wine, miso should be aged. After enjoying the Japanese miso experience, you will get to take home the 2kg of miso paste you made and when you taste it after a few months, you’ll realize that the wait was worth it!

Ichikikushikino is a city in Kagoshima Prefecture located along the Ichiki Coast. As a coastal city, it has a thriving fishing industry. The area’s bluefin tuna is particularly renowned (celebrated by the Kushino Tuna Festival) and the local style of ramen is, of course, tuna ramen. Hot springs, stunning mountains, and seaside parks and beaches are just a few of the natural attractions in the area.
