More like an artisan's workshop rather than a Japanese restaurant, Yoshizawa enriches the dining experience with a unique concept. This restaurant offers three types of menu: Hashiri, the flavor of the first catch of the season; Shun, the peak flavor of the season; and Nagori, the flavor of the past season. The dishes combine to tell the tale of the natural world of Japan and the changes of the season throughout the year.
Basing the restaurant's concept on that idea, the chef carefully selects the seasonal condiments and ingredients that fall under each category. Unlike others, Yoshizawa prepares seasonal course meals with ingredients from not only the local city but all across the country. Constantly brainstorming and executing various new ways of preparing these ingredients, the chef is always exploring further possibilities of his kaiseki cuisine.
