It was relentless dedication to these four tenets that propelled the original outlet in Tokyo’s upscale Aoyama district to two Michelin stars, and it is this same dedication that has led the Yaesu branch to the same level of repute as its older sibling.
“Sushi is not about technique; it’s about heart,” says second-generation owner and chef Shimamoto. Sure enough, a meal at Sushi Umi is markedly different from the typical image of a high-end omakase sushi service: the chefs behind the counter exchange easy banter with the diners at the counter, making them feel at ease regardless of whether whether they have been there for the first or 50th time.
It is with this same “heart” that the ingredients at Umi are chosen, including organic Hitomebore rice for the shari, cooked to fluffy perfection in a donabe earthenware pot from storied artisans Kumoigama. Ingredients are purchased not just from Toyosu Market every morning, but also directly from various fisheries and ports all over the country, which the owner has longstanding relationships with. Even the seasonal vegetables, grown naturally and not in greenhouses, are said to bestow a feeling of fullness.
The highlight of Yaesu Sushi Umi’s higher-end course menus is its caviar: it is sourced from a producer in Miyazaki Prefecture that has been producing caviar for over 40 years, and claims to be the only authentic aged caviar supplier in Japan. It is this same caviar that Sushi Umi proudly serves.
The restaurant is located directly outside Tokyo Station; “the gateway to Tokyo”, as the owner refers to it. Its reputation having been carried far and wide, it enjoys popularity among transient visitors passing through the many shinkansen lines, as well as among sushi enthusiasts looking to try the vaunted former two-Michelin-starred sushi without having to contend with the difficulty of securing a reservation at the original outlet.
