One of the most iconic Japanese foods is the humble tofu, or beancurd. Brought back to Japan from China by Buddhist monks during the Nara period, the art of tofu has had more than 1,000 years to be refined from when it first entered the country.
The culmination of these 1,000 years of continuous refinement can be tried at the Ume no Hana restaurants — one of Japan’s most prolific tofu establishments. Specializing in tofu in all its various forms, from boiled tofu to beancurd skin, to fried tofu, Ume no Hana’s chefs astound all comers with their mastery of all things tofu.
In particular, the restaurant is especially proud of its tofu shumai dumplings, which use tofu in place of the typical mixture of pork and shrimp. Other standouts include the yuba, or tofu skin, which is placed in front of guests for them to pull themselves as it forms layers over warm soy milk — a wonderfully tactile experience.
But that’s not all there is on the menu; the restaurant is just as dedicated to showing how seasonal ingredients can be used to complement tofu, showcasing the versatility of the beancurd. Signature dishes include wagyu beef grilled on a volcanic stone, which gives the meat an excellently crispy sear, sealing the juices inside — something that’s impossible with conventional grilling or frying methods.
While it may be in the middle of Osaka’s busy Honmachi district, the peaceful ambiance of Ume no Hana’s Honmachi branch makes it an especially popular choice to escape from the city. The interior design blends traditional Japanese elements with modern sophistication, featuring clean lines, natural wood finishes, and soft, muted tones.
Private tatami rooms provide an intimate dining experience for small groups, while the main dining area offers a more open, airy feel.
