When the fish market relocated to Toyosu, Tsukiji Kagura Sushi chose to stay in Tsukiji Outer Market, serving its long-time diners true-to-Edo and signature charred sushi as usual.

Restaurant Details

Young, dynamic and open to change? Not Tsukiji Kagura Sushi. Instead, the restaurant remains unapologetically traditional, cutting out orthodox Edomae sushi just as when Tokyo was called Edo. In fact, when the fish market relocated to Toyosu, the store stayed behind on Namiyoke Street of the Tsukiji Outer Market. In the wood-paneled space, business continues as usual.


The sushi spot draws a steady crop of patrons, certainly because it does so many things right. The head chef, who goes to Toyosu Market to get the ingredients himself, confidently wields his razor-sharp knives across the counter, slicing through ruby-red tuna, conger eel and squid. These fish — known as neta — are then pressed atop Yamagata-grown Hitomebore rice seasoned with a 5-year-old Kagura vinegar, a temperamental blend that draws out the umami of the grains.


Classically delicious, there’s a quiet story unfolding in the pauses between courses at Tsukiji Kagura Sushi. Back when there was no refrigeration, preservation techniques like vinegar curing, simmering and soaking were relied for longevity. Following this tradition, the chefs process the seafood — conger eel is boiled, fatty tuna marinated and squid cured.


One of the biggest draw cards is its seared sushi, charred to order, with the technique adjusted according to the fish type. Pristine cuts like red seabream, blackthroat seaperch, and medium-fatty tuna are delicately burned over an open flame, reducing excess fat while amplifying the natural flavors. Soy sauce is unnecessary; the nigiri is lacquered with Bolivian rock salt and a hint of lemon to elevate its purity.


Long-time patrons mingle with newcomers. Veteran executive chefs work alongside apprentices. This is an unshakable anchor of Edo.
