A mere three-minute walk from Higashi-Ginza station is the well-regarded kaiseki restaurant, Toku Uchiyama, which chef-owner Keisuke Kimura opened to showcase his own unique skills, which he has refined through years of experience in the Ginza culinary scene. While some aspects of the food served at Toku Uchiyama is a mirror of that of his past workplace, Ginza Uchiyama, Kimura's own restaurant also offers a whole new range of flavors and originality.
The signature dish of this restaurant is their ochazuke, a dish of rice with tea poured over it, covered with sesame sauce and filled with red sea bream from Awaji. It has become a must-order for anyone who visits. Another popular dish is the grilled sesame tofu. Its fluffy texture is a result of tireless kneading during preparation. Chef Kimura recommends this to be eaten with their thick sesame sauce.
