Located on the 38th floor of Tokyo’s Mandarin Oriental, Tapas Molecular Bar offers an avant-garde gastronomic experience with flavor and atmosphere in abundance. The Hong Kong native chef, Jeff Ramsey, studies food according to modern molecular gastronomy disciplines. His findings underpin the menu at this 2022 Michelin-starred theater of fine food.


You needn’t understand the facts and figures themselves. Ramsey has already taken care of all that, so all you have to do is relax into a culinary experience to remember, doing your best to remember every fine detail. Each dish is a small treasure to be savored — hence the “tapas” in the name. The styles are a mixture of Japanese and European influences, with modernist sensibilities.


There are only eight seats available per sitting, making this one of the most exclusive gastronomic events in town — more akin to experimental theater than standard dining. Reservations are 100% necessary, and space is limited, so be sure to book well in advance to score your ticket to one of the most fascinating restaurants in Tokyo.
