Deservingly, seats at the sushi bar are scarce because the quality of the seafood and the consistency of the knife skills on display have earned it a fiercely committed following. The dining room, saturated with wood accents, offers a masterclass in omakase where the high standard of Edomae sushi, Tokyo-born sushi, matches the delicacy of seasonal appetizers.
Simplicity and subtraction form a big chunk of Aoyogi's ethos. The sushi rice, often dismissed as a blank canvas, is shyly seasoned with just a hint of vinegar and portioned smaller for the fish — or neta — to shine. Head Chef Sugimori Tomoki personally selects fresh seafood each morning from his trusted suppliers, but any preparation that goes is pure talent: glossy fatty tuna drapes over the shari; ika (squid) is mathematically scored to mimic scales; kohada nigiri simply marked; and vivid orange surf clam slices outward like a blooming, extraterrestrial flower.
Though the menu may seem extensive — the nigiri alone consists of 14 precisely timed servings — the omakase format allows diners to watch the game without playing it; sometimes, it’s best to leave the details to the experts.
