Simplicity and subtraction form Sushi Aoyogi's ethos. Chef Sugimori exercises restraint through the sushi rice, which is delicately seasoned with a touch of vinegar and portioned smaller to let the neta (fish) take center stage. Behind the wooden counter, Sugimori shapes each morsel with precision: luscious fatty tuna draped seamlessly over shari, ika (squid) scored with geometric precision to mimic scales and vibrant surf clam sliced outward like a blooming, otherworldly flower.
