The inventive cooking practiced at Sublime — one of Tokyo’s most exciting Michelin-starred restaurants (Michelin Guide 2020) — is the work of Junichi Kato. After studying for years in both Copenhagen and Paris, he had the skills to return to Japan and create something fully his own.
Given the Scandinavian influence in his cooking, fermentation of course features. His fermented mushrooms have become one of his culinary calling cards. There are also a healthy amount of hearty meat dishes on the menu too: roast pigeon, smoked beef heart, pork ribs, roast wild duck, and more.
Lunch ordering is limited to the course menu, but a la carte is also possible at dinner. They’re also open later than most, so take your time to relax with a glass of fine wine afterwards.
