Shiosoba Jiku’s owner used to be a tempura maker. As he was biking in commemoration of his father’s loss from a sudden illness in 2021, a bowl of salt ramen on the road near the Seto inland sea made a profound impression on him. This experience led him to study at Miyajima ramen school and open his own shop.
Today, Shiosoba Jiku has become a renowned shop in the world of ramen with a Michelin Bib Gourmand status under its name. The store is known for its specialty smooth and firm noodles made with Nissin Soriki wheat flour. The noodles are served in a rich seafood-based broth, garnished with tender Ooyama chicken, succulent pork shoulder chashu, menma and flavorful tsukune (meatball).
The broth of the salt ramen is seafood-based and doesn’t use any chemical seasoning. The chef recommends first trying the soy ramen, with its broth made from pork and chicken. Both ramen broths are very different, and the latter is susceptible to being appreciated by most tastes.
The ceiling decoration aspires to remind of old-times Hiroshima food stalls, whiole the triangular, 7-seat counter becomes the live stage for the chef to prepare the ramen.
