An omakase in Shinjuku. Just the thought evokes a certain dread, knowing that one of the highest forms of dining takes place in one of Tokyo’s most prolific neighborhoods.
But while Shinjuku Makoto has the looks, trimmings and quality of a fine dining restaurant, the team is presenting a much more casual and affordable take on the sushi. The venue opened back in 2019, backed by the same figures behind the town-favorite Sushi Lab, and remains a steadfast emblem of Edomae sushi.
Sushi Makoto’s seasonal omakase delivers spectacular flawlessness, with fish culled daily from the market and the picks governed entirely by the sushi master’s whim. Luscious, marinated red tuna wraps the tongue in umami. Translucent, meticulously scored squid is elevated with a dollop of uni and a sprinkling of seeds, creating a delightful play of textures. The salted horse mackerel, prepared with delicate knifework, teases the mouth with subtle brininess. Even the rice, where these beautiful slices rest, is transcendent, flavored from a blend of rice vinegar and red vinegar.
It’s not all nigiri, either. The evening might begin with original renditions like tuna shigureni, a clever twist on the classic beef dish simmered with ginger. Chawanmushi is poured with ankake, a savory dashi sauce. A bowl of fish broth arrives, inviting diners to sip in quiet reverence. The meal often closes with tamagoyaki, a sweet rolled omelet enhanced with shrimp and Yamato yam.
There’s no need to fear here. Amid the sky-soaring structures of Nishi Shinjuku, the modern interior is designed as a tranquil escape from the hustle and bustle of daily life. With only eight special seats at the counter, everyone is treated to a front-row view of the chef’s masterful craftsmanship.
