Following a modern wave of ramen-ya that are defined by their slick plating, contemporary interior design, and passionate, uncompromising caftsmenship, Ramen Matsui has carved out a place for itself among Tokyo’s ramen greats and earned a Michelin Bib Gourmand.


Opened in May 2023 near Shinjuku Gyoen National Garden, the husband and wife duo behind Ramen Matsuo form a powerful team. The husband boils noodles while his wife delicately arranges topings ranging from chachu to fermented bamboo shoots and citrus. Each web of ramen curls under the translucent broth in a pristine mat.


Taking a cue from the husband’s Hokkaido roots, kombu, shijimi clams, pork and scallops from the Northernmost prefecture make appearances in Ramen Matsui’s bowls. A base stock of soy sauce, salt, and dried sardines gets an extra kick from a dash of sake.


Ramen Matsui’s sake applications extend to an exciting list of personally selected regional sake and domestic wines. While beer is often the go to for a bowl of ramen, this Gaienmae shop challenges classic assumptions with its refreshing noodles.
