Sapporo’s Oryori Fujita invites diners to pause amidst today’s fast-paced world with its patiently formulated kaiseki dining experience.

Restaurant Details

Hidden in the tranquil residential neighborhood of Minami-Maruyama, Sapporo, Oryori Fujita is inviting diners to slow down in today’s fast-paced world through its fresh kaiseki dining experience.

Unlike modern restaurants that strive to reinvent the wheel, Chef Fujita adheres to classic techniques, delivering an authentic kaiseki, or multicourse meal that changes with the rhythm of nature and his whims.

One evening, you may savor a golden-eyed snapper bowl with a crab and sweet potato chrysanthemum broth during the late summer months, and the next month, indulge in the opulence of Okhotsk Sea snow crab, conger eel, and sea urchin alongside other exquisite delicacies. From the delicate sashimi to the savory grilled fish and the comforting rice served in an earthenware pot, every element of Oryori Fujita’s kaiseki course is well thought out and prepared.

The eight-seat, reservation-only restaurant in a charming, renovated house is deliberately designed to be intimate to close the distance between Chef Fujita and the other guests.
