The ever-popular Ooicho concept from Sakae, Nagoya, spreads its wings and makes Nishi its second nest. Located five minutes from the Nagoya Castle, the store has evolved into a laidback spot that anchors its reputation on yakitori, zeroing in on a neck-to-tail approach that celebrates all parts of the chicken.
At the heart of Ooicho's offerings is Kinsodori chicken from Aichi Prefecture, delivered fresh daily. Known for its plump, elastic texture, the chicken achieves a perfect balance of chewiness and firmness when kissed by the high charcoal flames. Even the skin is soft and thin, low in fat.
Each skewer is seasoned in real-time with the restaurant's signature homemade salt — an umami-rich blend derived from bonito and kelp stock, carefully distilled over a week to concentrate the flavors of the sea.
It's hard to map out the right yakitori journey with so many different types of Japanese skewers. But for those willing to explore all parts of the chicken, heed the restaurant’s recommendation and sample their tsukune, a trio of chicken meatballs made from scratch, enhanced with a touch of nutty black sesame, or the perfectly prepared quail egg with luscious runny yolk and delicately set whites.
