To hold three Michelin stars is an achievement that most chefs will never reach — to receive even one is considered an incredible feat. RyuGin in Tokyo, on the other hand, sets itself apart by having held this accolade for the better part of two decades (not to mention a regular feature on the World's 50 Best Restaurants).


With the release of the Michelin Guide Tokyo 2025, its head chef Yamamoto Seiji has helped the restaurant maintain its title for 14 years running, keeping up a legacy that first started with the Michelin Guide Tokyo-Yokohama-Shonan 2011.


For Chef Yamamoto, a kaiseki meal is a vessel through which to savor the rich cultural character of Japan. Lofty philosophies are one thing, but a good restaurateur must have the quality and skills to back them up. With a mixed scientific and spiritual approach — equal parts French haute cuisine and Edo-era tradition — he and the chefs at RyuGin cook up a seasonal omakase meal with a dozen dishes. Although Chef Yamamoto experiments at the lofty heights of the gastronomic avant garde, his feet are still firmly planted in the soil of Japan, with a focus on premium seasonal ingredients like Kyoto vegetables, pufferfish, quality soba, and snow crab.


The restaurant relocated to its current spot in the Hibiya Midtown entertainment complex in 2018, at the foot of the Imperial Palace — a fitting place for one of the monarchs of kaiseki cuisine. Even as he expands operations in Taipei and Hong Kong in the near future, Chef Yamamoto looks to continue pushing the boundaries of Japanese cuisine back home.
