Get a taste of Kaga cuisine, Kanazawa’s traditional regional specialty, at Nihonbashi Asada in the Mitsui Garden Hotel Nihonbashi Premier.

Restaurant Details

Located on the ninth floor inside the Mitsui Garden Hotel Nihonbashi Premier, visitors can savor Kaga cuisine while overlooking the buzzing commercial district of Nihonbashi, here at Nihonbashi Asada.

Kaga cuisine is an original type of cuisine that originates in Kanazawa, the capital of Ishikawa Prefecture. It’s a lesser-known school of Japanese cuisine that utilizes seafood,

vegetables, and cooking methods from Kanazawa.

Nihonbashi Asada traces its heritage back to a humble ryokan in Kanazawa, where it first started serving customers in 1867. After nearly a century and a half, this restaurant now proudly shows off its culinary heritage in one of the most luxurious hotels of the district.

The presentation of dishes at Nihonbashi Asada is an art form in itself. Every plate is a canvas where colors, textures, and shapes come together to create a visually stunning tableau — a kaiseki meal that is truly representative of the Kaga tradition. Each meal is made with top-notch seasonal ingredients, as well as superb quality wagyu.

Beyond the culinary excellence, diners can expect to receive the warmest hospitality, thanks to their long history as a traditional ryokan. The eatery cultivates a welcoming atmosphere for anyone — including children. Whether it’s breakfast, lunch, or dinner, a meal at Nihonbashi Asada is a special occasion.
