This tiny, 10-seat ramen shop in downtown Kyoto was once a well-kept secret before its feature in the Michelin Guide drew eager crowds forming curling lines at the storefront. The aroma of simmering broth wafts from within and hints at what’s to come.


Here, ramen takes on a uniquely Kyoto twist and highlights the gentle flavors of dashi. Soup is infused with the delicate essence of stock as an homage to the city's culinary roots, and the chefs craft it by steeping Rausu kombu and a medley of seafood. The ramen is served in two varieties of soy sauce: white, for a subtle delicacy to the soup, and black, which adds depth and robustness. Freshly shaved katsuobushi and a generous slice of succulent pork become a play of flavor and texture.


The "Dashi Soba" remains a timeless favorite, while "Grilled Wagyu Beef Ramen" is heartier and more indulgent. The dashi-infused broth maintains its signature depth, while the seared wagyu beef, cooked in a broth reminiscent of sukiyaki, imparts a delightful hint of sweetness to the soup.
