The eight-seat cypress wood counter is dedicated to sushi, offering a view of their chefs preparing each piece from scratch. At the tables and private rooms, kaiseki-style course menus are served, showcasing a plethora of fresh seasonal ingredients.
The chefs are particular about their blend of dashi broth: the foundation of all Japanese cooking. Theirs is a rich and flavourful concoction that has become emblematic of Benkay’s signature taste.
