This is due in part to their adherence to the local style of sushi, Miyazaki-mae, which is distinct from the usual Tokyo style served in the majority of restaurants. This means you’ll be surprised by some unique touches, such as sushi rice flavored with honey from the prefecture. These local touches give unique twists to familiar ingredients. Diners can also enjoy some seasonal catches from the region that don’t feature in the standard Tokyo-style repertoire.
Founded in 1973, Isshinzushi Koyo has remained in the family ever since. The current owner chose not to become a chef himself, but instead manages the restaurant, promoting it on the national stage with the help of his master chef Ryosuke Kamimura — a Miyazaki native who returned there after 13 years of working in Osaka.
The expanded layout is designed to accommodate the big reputation which has resulted from their collaboration, with a 7 meter counter and private rooms. After securing a seat here, you’ll be able to choose from either the reasonably priced set-course or a la carte ordering, meaning that everyone can get a taste of authentic Miyazaki-mae sushi without breaking the bank.
