The restaurant serves red king crab, sourced from the Bering Sea off Kamchatka Peninsula, and snow crab from Russia. Throughout the year, they only use large, top hairy crabs — February in Akkeshi and May along the Pacific coast.
Dining at Hyosetsu No Mon is predominantly traditional, offering tatami private rooms for those who wish to enjoy their crustacean in peace. As expected, the menu is centered around crab, with both accessible and indulgent options. One standout dish is the deep-fried crab shell, made with shredded snow crab meat, seasoned with crab miso, soft-boiled egg and corn, with crab stock powder as a secret ingredient.
