Every kaiseki lover knows that a proper traditional set-course meal, with the freshest ingredients and seasonal picks, doesn’t come cheap. In that respect, this restaurant goes against the grain. Hashimoto is a wonderful bargain for those looking to get fully immersed in local traditional cuisine.


Hashimoto offers different types of course meals that contain a variable number of dishes. One who's looking to get a taste of the kaiseki culture without splurging should opt for the Mini Kaiseki course. A step up would be the Special Kaiseki in which there's eight servings with one very special product. Alternatively, go all out and get the full kaiseki cuisine, the Omakase Kaiseki where you leave your fate totally in the hands of the chef.


While the Mini Kaiseki and Special Kaiseki have semi-fixed menus, with most of their ingredients available all year round, some of the dishes, as well as most of the ones in the Omakase Kaiseki course, are constantly changing. This element of surprise is one of the key aspects of kaiseki.
