Nominated as a 2025 Bib Gourmand restaurant, Hakodate Shioramen Goryokaku offers a taste of northern Japan in a bowl of salt-based ramen in Ogikubo, a green suburban neighborhood of Tokyo. The ramen shop derives its name from the chef and owner’s birthplace in the Goryokaku district of Hakodate, located in Hokkaido, Japan’s northernmost island.
The menu centers around a single main dish: Hakodate salt-based ramen. The noodles are made from Hokkaido wheat flour. While shio ramen is often regarded as subtle in flavor, this establishment’s renowned broth achieves depth through high-quality makombu (kelp), dried scallops and chicken bones, all sourced from Hokkaido. The salt sauce is prepared with kombu kelp and scallop adductor muscles from Hokkaido, imparting a light seafood flavor to the clear soup.
A popular topping is gagome kelp, a moss-colored kelp harvested from the seas near Hakodate. Customers can also opt for a bowl of rice topped with fried Japanese scallops. Another distinctive topping is a slice of fu, a wheat gluten that transforms into a fluffy morsel when it absorbs the broth.
