In the heart of Tokyo’s gourmet hotspot, Ginza, lies an extremely famous kaiseki restaurant, offering a style of traditional Japanese cuisine that’s prepared in small, delicate dishes. Dedicated to the Japanese concept of authenticity, called “honmono,” Ginza Kojyu delivers a total cultural experience, from the food presentation and ingredients to the restaurant decorations and tableware.
Committed to presenting the four seasons in his cuisine, in celebration of the gifts of nature, Chef Toru Okuda carefully selects fresh seasonal ingredients sourced directly from local farmers and fishermen.
Using new approaches and techniques to keep the element of surprise and playfulness in his menu, dishes include ingredients like scallions, sea urchins and wagyu beef, which are prepared with spices and herbs according to the season. With each dish contributing their own delicate and unique flavors, Chef Okuda complements them with each other so one doesn’t overpower the other.
