One of the most high-profile kaiseki restaurant openings of 2022, the excitement around Ginza Kitagawa was palpable in Tokyo’s gourmet circuit: expectations were high for the sister store of the two-Michelin-starred Ginza Shinohara, a high-end restaurant employing unique techniques developed in Shiga.
It looks as though the buzz was well deserved. Just two years after opening, Ginza Kitagawa has earned itself its own Michelin star in the Michelin Guide Tokyo 2024. The young yet experienced chefs, having trained in several famous tempura, sushi, and French establishments, bring Shinohara’s celebrated styles to a wider audience in Ginza Kitagawa.
But that’s not to say that head chef Kitagawa Kazuyuki only imitates the style of his master. After extensive discussion with tempura masters, he has opted to take a more tempura-focused approach at Ginza Kitagawa, to great critical and popular appeal. For instance, instead of the traditional takikomi-gohan (Japanese-style mixed rice), Chef Kitagawa instead opts for rice mixed with crushed kakiage (tempura fritters), and has flash-fried sashimi as part of his menu offerings.
With tempura at the forefront, Ginza Kitagawa presents diners with a beautiful canvas of flavors through their omakase courses.
