The queue which forms even before this ramen shop opens is a huge giveaway that it's extremely popular. En is a humble, cozy ramen-ya on the outer west side of Tokyo, yet despite its distance from the center of the city, foodies don't mind traveling the distance for En's delicious ramen.


Niboshi based broth is their specialty. Both the shio and shoyu are made with the same niboshi stock, but the addition of salt or soy sauce emphasizes different flavors. The niboshi shoyu ramen is light and rich in essence, with the multiple soy sauce mix elevating the niboshi. From handmade noodles to oven-baked charshu, En is worth the trip for anyone who craves a bowl of excellent niboshi ramen.
