Hidden away from the crowds visiting Kyoto’s Imperial Palace, just to the south in a small machiya (a traditional Japanese townhouse) is ASSEMBLAGES KAKIMOTO. Headed by the chef who represented Japan at the World Chocolate Masters competition, Akihiro Kakimoto, this cake shop combines his three skills: chocolatier, patissier, and cuisinier. The delicious pastries and the extensive collection of handmade chocolate, including flavors such as vanilla, myoga ginger, and rosemary, fill up the displays in the shop.
Using all sorts of ingredients to create unique and magical flavors for their sweets, Assemblages's cakes and chocolates are full of surprises and bursts of joy in every bite. Their specialty cake is the product they’re most proud of. With its many layers including caramel, chocolate, and banana in the forms of mousses and sponge cake layers, the blend of all of them creates a sensational taste that can't be duplicated anywhere else.
