To stay at the Aman Kyoto hotel is to immerse oneself in the beauty of northern Kyoto. Likewise, the cuisine at the resort’s in-house restaurant perfectly embodies this ethos.



The luxurious dining room here offers aspects of the surrounding forests—the perfect setting for a kaiseki meal which draws its ingredients and inspiration from this same land. No two meals served here are alike: each is custom-tailored to the day’s best ingredients, the tastes of individual guests, and the whims of Executive Chef Shinishiro Tagaki.



The bearer of two Michelin stars, Chef Tagaki selects local seasonal produce like an artist choosing a palette, then transforms them with meticulous precision into works of gastronomic art.



The primary course menu is a classic kaiseki meal. Other options include a special Hirai beef kaiseki, which puts local A5 wagyu at the center of the show. Daytime visitors can also opt for a special afternoon tea set, with a platter of handmade traditional wagashi sweets.
