Kawara soba is a Hiroshima Prefecture staple. Considered a local soul food, it features green tea-infused soba noodles topped with beef or pork, strips of fried egg and dried seaweed, then grilled on a hot roof tile (kawara). These noodles get their distinctive flavor from renowned Uji tea, complemented by fresh ingredients like lemon, momiji oroshi (grated daikon radish) and spring onions. You’ll soon find out why Hiroshima residents love this dish so much.
