主厨铃木信太郎(Shintaro Suzuki)当然具备这一点。每天早上,他都会亲自在市场上手工检查当天捕获的每一条鱼,拒绝任何不符合他的高标准的鱼。他说,"只有经过精心处理的鱼才足够美味,"他用手测试每条鱼的质地。
