What happens when Japanese yakitori and French plates meet in the middle? You’d get Yakitori Moe Es, a Michelin-featured big shot in Roppongi that’s not just making ripples, but creating major waves in the chicken skewer scene.


It’s best not to hurry at Yakitori Moe's sister store. The chef has formulated a multicourse game plan centered around the fully explored potential of chicken. Yakitori Moe Es uses whole chickens that follow long breeding programs; the meat is left to rest for several days to lock in the flavor. There might be an aperitif that prelude to a trio of amuse-bouche and consomme soup. Skewers of chicken fillet wrapped in perilla leaves and gizzard, served one at a time, are licked by charcoal-fueled heat. The chicken is treated simply with minimal seasoning to highlight its natural flavor, so preference is given to salt over sauce. Chicken breast and wings might also take center stage, while vegetable yakitori, like mushrooms and eggplant from local farms, may be interspersed throughout the meal.


It’ll be a couple of hours by the time the omakase caps off with its silky chicken soba. Add a focus on great French wines and impeccable service, and you get a brilliant example of yakitori dining in Tokyo done anew.
