Known for its refined take on Hokkaido’s regional fare, Mieda transforms local ingredients into an elevated experience. True to kappo tradition, which fosters a closer connection between chef and guest, most dishes in its sophisticated omakase courses are prepared right before guests’ eyes.
The man behind the counter is none other than visionary Chef Mieda, who selects ingredients from the prefecture based on their peak. Diners are treated to a seasonal selection of dishes that uses Hokkaido’s proud bounty: a shark fin hotpot gets plenty of Hakodate matsutake mushroom. A unique pistachio chawanmushi is filled with Bafun sea urchin, turning the dish into a tug-of-war between earthy, nutty sweetness and oceanic saltiness.
There are also teases of more luxurious commodities, such as corn tempura topped with caviar and chopped black truffles. During the winter, Mieda also brings in the fugu, the perilous pufferfish that only a handful of certified chefs are allowed to handle.
But Mieda wouldn’t be where it is today — an esteemed culinary beacon in the cold of Sapporo — without Chef Mieda’s warm, welcoming service. Any initial thoughts that the dining experience might feel cold or distant quickly fade as he greets his patrons with a bright smile. To conclude the course, he beams with pride while presenting his signature hagama pot-cooked rice. In the past, it featured Hanasaki crab folded into grains and topped with crispy fried dumplings.
