在豐州甚至築地魚市出現之前,就已經有了魚橋。


在整個江戶時代,日本橋大碼頭一直是首都最大的貿易中心,其旁邊的大型公共廣場自然就成了魚橋魚市。據說,到 1912 年,在魚橋進行的交易每天價值超過 1,000 兩--以今天的標準來看,這不是一個大數目,但在當時絕對是一個驚人的數字。


豐田就是在這樣的環境中誕生的,它是三越主要街道上一個簡陋的路邊攤(屋臺)。1961 年,餐廳從主要街道搬到了現在的位置,並將重點轉向了割烹料理,但其海鮮的新鮮度歷經五代人的努力始終未變。


160 多年來,豐田的廚師們一直傳承着江戶前的烹飪傳統。作爲裝卸工人和漁民等勞動人民的食物,江戶前料理的特點是剛勁有力。這與傳統京都料理的細膩甜美形成鮮明對比,在兩家烹飪學校的醬油中體現得尤爲明顯。


這甚至延伸到芝麻豆腐等傳統素食菜餚。不過,豐田在製作過程中加入了牛奶,這使得芝麻豆腐比普通芝麻豆腐口感更粘,香味更濃。

Prepared by an expert chef with a license to safely prepare the fish, the course menu contains torafugu in a number of different forms, from fried to grilled to hotpot.
