在割烹柚葉用餐,首先要從旅途開始。餐廳位於目黑川河畔,春天,步行至餐廳門口的路上開滿了粉紅色的櫻花;秋天,河畔一片秋色。
在成爲割烹柚葉的店主之前,岡田大輔曾是多家日本餐廳的資深廚師,其中包括東京王子公園塔的芝櫻餐廳。
岡田大輔的父親也曾經營過一家日本餐廳,因此岡田大輔對季節有着敏銳的感知力,他親自評估每一種食材,不僅要確保其最新鮮、最美味,還要確保其最能體現當季的特色。很少有廚師能像他這樣對食材如此挑剔;他每週都會與蔬菜供應商開會,計劃菜單的具體細節,精確到每一天;每天早上,他都會前往豐洲採購剛下船的新鮮魚類。
