In the residential neighborhood of Kego lies a well-known kappo restaurant with the name of Tashima. Kappo cuisine is similar to both kaiseki — a kind of formal Japanese dining that serves seasonal course menus, prepared and presented in an elaborate and impressive manner — and a casual izakaya. Just like the kaiseki, kappo cuisine offers a multi-course menu but without the full-on formality.
The owner-chef of this kappo restaurant aims to present the natural flavors of each ingredient at its finest. He draws them out by using various unique cooking techniques such as adding bamboo shoots to the kombu dashi dish or steaming abalone and octopus together. The concept at Tashima is using as little seasoning as possible to preserve the natural flavors and raise the umami factor.
