Run by the fourth-generation owner, Mr. Terada, Mokube can be found not too far from Shijo Street in Kyoto. This Japanese restaurant has more than 50 years of rich history but their cuisine is ever-evolving as the years go by. The concept of Mokube has always been to preserve the old tradition while continuously improving to fit the coming times.
Everything from vegetables to meat and fish are chosen to capture the fragrances of Kyoto’s seasons. Techniques and fundamentals from the old tradition are still used to prepare some ingredients while still exploring new ways of cooking. Expect a flavorful broth that’s both nostalgic and exciting, made from top-quality kombu seaweed and various types of bonito flakes.
At Mokube, the cuisine is not the only important factor. No detail is left out — tableware is chosen based on the season and events taking place in Kyoto, and the attentive hospitality leaves you with a warm feeling in your chest.
